Solar-assisted dehumidification system uses a water-based solar collector incorporating storage, regeneration and generation adsorption columns and a drying chamber. The drying chamber can be maintained at a very stab;e temperature and relative humidity conditions for high quality drying. The quality of the dried herbs remain high since many of their active ingredients remain intact after drying, making this system suitable for drying medicinal herbs.
